Los Rios, 70% Ecuador - Our newest single origin; there are no added flavors, we let the chocolate speak for itself. This 70% has an amazing raw cacao flavor that will really bring out the dried fruit notes of the Tawny Port Coffee.
Cinnamon Cayenne - Made with 70% Colombian single origin chocolate, cinnamon and a touch of cayenne create and warm and slightly spicy truffle. This pairing will provide a nice contrast to the sweet notes of the coffee, reminiscent of Mexican drinking chocolate.
Machu Picchu - 65% Peruvian single origin blended with vanilla, cinnamon, cacao nibs for texture, and topped with candied almond pieces. This truffle will be a wonderful compliment to the nutty notes of the coffee with the candied almonds, vanilla, and cinnamon creating a flavor profile of a chocolate pastry to go with your morning cup.
Lucille's Vanilla - Made with a blend of mild dark chocolates and an increased portion of vanilla extract, this truffle is for those with sweeter tastes. Inspiration for this truffle came from the chocolate pudding that Gail's mother made all throughout her childhood. This pairing will satisfy any sweet tooth as the sweetness of the port flavor will be enhanced by this truffle.
Raspberry - Fresh raspberry puree is blended with 35% milk chocolate and 65% Colombian dark. This truffle is often described as "juicy" for its big fruit flavor. The fruity red berry of notes of the coffee will shine through with this pairing.
Rose - We start by steeping rose tea in cream that is combined with 64% Ecuadoran chocolate to create a beautifully light and floral truffle. This complimentary pairing will highlight the natural floral flavors of the coffee and accentuate the floral tea flavors of the truffle.
