Our latest single-origin offering from Co-op Condorcanqui in Northern Peru is naturally processed using the unwashed method where the bean remains in the cherry as it dries. 
During this three to six week drying period - much longer than the traditional washed process - the sugar content of the coffee bean increases. The final result is a full-bodied, fruitier coffee which you will realize the moment you open the bag.
